WASH, peel and pit peaches. Cut into thick slices. Treat fruit to prevent browning submerge cut peaches in a mixture of 1/4 cup lemon juice and 4 cups water
COMBINE sugar, wine and honey. Cook until sugar dissolves. Add peaches in syrup one layer at a time and cook for 3 minutes.
Place hot peaches into a large jar with a tight-fitting lid. Add allspice, cloves and stick cinnamon.
LADLE hot syrup over peaches until covered. Seal jar and allow to cool before refrigerating. Serve with poultry and veal.
